On Saturday 23 June Norbert Niederkofler, one of Italy’s most highly-regarded chefs, will join Francesco Mazzei at his Battersea restaurant,Fiume, for an evening of showstopping seafood dishes as part of the inaugural London Seafood Festival.
Since joining Hotel Rosa Alpina at the base of the Dolomite mountains in 1994, Niederkofler has transformed the hotel’s simple pizzeria into a world-renowned, three Michelin-starred restaurant, St. Hubertus. By only using produce from the nearby Dolomite mountains, he gave birth to a cooking philosophy famous across Italy, and despite being very selective about the ingredients he uses, his cuisine is some of the most varied in the country.
For one night only, Niederkofler will be offering guests to Francesco Mazzei’s riverside restaurant a taste of his famous cuisine, with a stunning dish of Risotto with tomato water, bottarga and basil oil. Meanwhile, Mazzei will be cooking up Scottish scallops with ‘Nduja & salsa verde.
